PAVLOVA

You know when you make up your hypothetical last meal, mine always contains one thing. Pavlova.

Since I was a kid Pavlova has always been my favourite thing. My mums Pavlova has a high, crispy shell and is lovely and fluffy on the inside. When I married into a family that are equally Pavlova mad I loved that Greigs mums was different, flatter but with a more chewy centre. So yesterday I had a go for the first time and it worked out so well I thought I’d share!

I think the great thing about this dessert is that your going to look like a domestic goddess but it’s really simple and only has 4 ingredients which you probably already have in your pantry.

WHAT YOUR GOING TO NEED 

4 X eggs

250g of caster sugar

1 teaspoon of vanilla extract

1 x table spoon of  corn flour

 

HOW TO PUT IT ALL TOGETHER

Pre-heat your oven to 130 (this is for a fan forced oven). Prepare your baking tray with baking parchment. Separate your egg whites and put them into a large mixing bowl. I would definitely recommend using an electric whisk for this. Whisk until the egg whites are stiff. Continue whisking whilst gradually adding the castor sugar a tablespoon at a time, then the cornflour and vanilla extract. Once the mixture is holding peaks and has a nice sheen to it it’s ready! Spoon the mixture onto the baking parchment creating a circular nest.

Place the Pavlova into the oven for 1 hour, if the Pavlova starts to go brown turn the oven down slightly. After the hour turn the oven off but leave the Pavlova to sit in the cooling oven for a further hour then remove to allow to fully cool.

Carefully remove the Pavlova from the baking parchment and top with whipped cream. I like to add berries on top, shaved chocolate also works great as well!
