HEDGEHOG

 

Growing up my mum baked everything. Very rarely would you go to our cupboard and not find a delicious cake, yummy biscuits or best of all a slice in the fridge! Hedgehog was definitely our favourite and has become a favourite in my house as well!

The best thing about it, it’s super simple (small hands will love this one!) and you’ll probably already have the ingredients. Also no bake time so you can dive in straight away!

WHAT YOUR GOING TO NEED

1 x packet of rich tea biscuits (UK) Marrie Biscuits (Australia & NZ)

1/4 cup of sugar

125g of butter

2 tablespoons of cocoa

1 x egg

 

HOW TO PUT IT ALL TOGETHER

Crush the biscuits with a rolling pin or in a blender. I like mine to be a bit chunky but you can crush them down as finely as you like.Β  In a saucepan melt the butter adding the sugar and cocoa. Once boiling remove from heat and stir in the egg. Pour the mixture over the biscuits, mix well and press the mixture into a slice container then pop it in the fridge.

I like the finish my hedge hog with a simple icing and always sprinkles! My go to icing is just icing sugar, a teaspoon of butter, teaspoon of cocoa and a tiny bit of water until you have the consistency of icing.

The base mixture is so good I promise it’s going to be hard not to eat it before it hits the container.
