TEA CAKE

When I was little my mum baked constantly. Maybe that’s why I now can’t walk past a baked good! Naturally we would bake with her. My favourite go to recipes were meringues, chocolate cake and this super simple Tea Cake which was a recipe passed down from Jose. Jose was a lovely lady that owned the farm my parents worked on when they were newlyweds. She was like a Nanna to us and trips to their potato and asparagus farm were always the best!

This cake is so simple and the perfect baked good to jazz up a cuppa with a girl friend or pop around to a new neighbour. We have new neighbours and I’m going to be the creepy lady that pops over with the cake!

WHAT YOU’RE GOING TO NEED

4 oz of sugar

4oz of butter

1 egg

1 cup of self raising flour

1/2 cup of milk

Some sugar and cinnamon to sprinkle over the cake.

HOW TO PUT IT ALL TOGETHER

Pre-heat your oven to 180 degrees.

Beat the sugar, butter and egg together.

Add the self-raising flour and milk beat until you have a smooth batter.

Pour batter into a greased cake tin.

Bake for 30mins or until a skewer comes out clean.

Whilst still hot cover in butter and sprinkle with the sugar and cinnamon mix.
